What started out as one small pub in Alamo Heights has evolved into a fast growing chain of British themed restaurants. While small, each design includes a variety of elements and materials to represent the traditional pubs of Europe. Emphasis was given to the feel of several different spaces, and no dining area is larger than 30 seats in order to feel cozy and foster conversation among friends. The kitchen was redesigned several times to make it exceptionally efficient to serve the diverse menu that is offered.
Design, documentation, and construction observation services on several local chain restaurants, coordinated with vendors and contractors. Worked with owner to develop a set of standards to facilitate design and development of franchises around the nation. Services were performed while employed with Thorn+Graves, PLLC.
